Anyone following me on Twitter will know I've spent a lot of time doing timelapses the the last few months. Unfortunately I can't share any with you at the moment as almost all of them have been for a paid project that I don't have the rights to show you.
Instead here is a rather stunning example from the site Timescapes which shows just how good timelapses can be.
Now this video uses all sorts of fancy things like motorised sliders, but to get started with time lapsing all you need is a cheap tripod and some kind of remote shutter control. Preferably a battery grip and a large memory card as well. I use cheap third party remotes with timers that are ideal for timelapse. You simply set up your shot, tell the remote how many shots it should take and how long each interval should be between shots. You can then stitch all you stills together in Quicktime Pro (or similar) and you then have a super high resolution video clip ready for editing.
There is a lot of trial and error involved but they are very statifying when you get them right. A warning though you may find yourself getting a little addicted.
I will post a more in depth tutorial on Timelapsing in the future but I still have a lot to learn as it is quite an art.
Here are remotes I use for the 5D, 7D and a separate one that fits the 550d.
