Very simple really lp-e6 for the 7D or 5D and lp-e8 for the 550d. I tend to find that battery lasts for about a card and a halfs worth of shooting (16gb card). If you know you're going to be at a location with power then you can get by with just two batteries, but just like memory cards the more you can afford the better.
There are third party batteries around but currently none I fully trust. With the fundamentals like this I like to know I can rely on them, especially if I'm using them in a professional environment.
